Maíz escuadrado (huskless maize)

The cultivation of maíz escuadrado (huskless maize) in el Berguedà district started in the 18th century. This cereal originally came from America and began to appear in Europe in the 16th century. Because of its high yield and low output cost, the local farmers were very interested in this American grain. This variety, which is characterised by its white colour, gets its name from the process used to remove the husk, known as ‘escuadrar’. In el Berguedà it is traditional to put this maize on the special Christmas ‘escudella’ plate.
