Ventre d’ossos cured sausage

The ventre d’ossos (bone belly) is a cured sausage which is made from the tongue, ribs, liver and other parts of the pig, salt and pepper. It is produced in el Vallès Oriental district in a completely artisan way, 100% hand-made because the ribs prevent mechanised stuffing.It is also known as the bag of bones and is normally eaten cooked with raisins, plums, noodles, beans, peas or also included in a paella-style arroz a la cazuela dish.
