The new Hotel España is committed to gastronomy, and Martin Berasategui is the gastronomy director. At the Fond España restaurant, Berasategui brings back the old concept of inns, serving a traditional cuisine from the land with a modern touch, with dishes such as the pilota (a long meatball cut into slices) confit with Perol butifarra sausage. Chef Xavier Sender is in charge of the kitchen, with years of experience working under Berasategui.
