The philosophy of this new place was to delve deep into its taste memory and influences over its long history, and thereby offer real signature cuisine expressing all its creativity founded on three premises: search for the best ingredients, technique and respect for traditions although contributing their own personality. With the kitchen on show and truffles always taking centre stage, their elegant yet sober setting offers two rooms and two inner terraces.
