The poularde of El Berguedà has a unique flavour thanks to being fed on traditional corn and that milk and aromatic herbs are added to its diet. As a result, its meat has a delightful aroma and texture. It is actually a young hen that has been spayed after a very delicate process. The spaying is done precisely to improve its organoleptic qualities. The group Ramaders de Muntanya del Berguedà is the only one in Catalonia dedicated to the breeding of poulardes, furthermore very limited, and which distributes above all at Christmas. Amongst the dishes in which they are used there are some as mouthwatering as poularde stuffed with foie or poularde with pan truffled butifarras and tender onions. In the village of Prats de Lluçanès, in early December, coinciding with the Fira de Santa Llúcia, a Christmas recipe contest for free range poultry is held which includes various recipes for dishes prepared using this fowl.
