Miguel Sánchez Romera, a neuro-surgeon who retrained as a chef, offers experimental cuisine in this restaurant, where his daring has earned him a Michelin star. The establishment is housed in a splendid 17th century masía decorated in a minimalist style. The food comes in a single tasting menu featuring a succession of small plates combining creativity and colour. Their menu features sardine loins with black olive pâté, the juice from sweet red peppers in vanilla mousseline and pepper pearls, vegetables stewed en cocotte and their broth, duck entrecôte with spices and rice soufflé with vanilla and curry. Miguel Sánchez Romera makes use of other areas in the masía to set up oil tasting, with products from all Spanish denominations of origins and cured Iberian ham tasting and he organises cheese tasting in a natural cave with over 100 products from all over Europe. The wine cellar is excellent, with over 600 references on display. As an interesting feature, the restaurant has a library with almost 2000 volumes on culinary literature.
