The evolution of this family business created in 1790 is unmistakable. The grandfather of the family began the operation in the towm of Les Cabanyes in the 1950s. In the 1960s, it was moved to Pacs del Penedès, where he continued working withbulk wine and began to produce and bottle cava.His son then began marketing bottled wine, and the third generation, the current one, is devoted to the creation of estate wines and limited-edition wines that have undergone a long ageing process.The entire process, from the cultivation of 172 hectares of their own vines to vinification and bottling, is respectful towards the environment. In fact, the family has replaced synthetic fertilisers with a herd of one thousand sheep which during the winter graze on the family estates.Currently, they market700,000 bottles a year of wine and cava, obtained from the eighteen varieties of grapes they cultivate. In addition to native varieties (Garnacha, Xarel·lo, Macabeo and Parellada), they also work with Chardonnay, Sauvignon Blanc, Gewürztraminer, Pinot Noir, Mencía and Merlot varieties in higher, colder areas and Cabernet Sauvignon and Franc, Syrah, Tempranillo, Muscat, Petit Verdot and Touriga Nacional in lower, warmer zones. Visits to theParés Baltà facility, a company engaged exclusively in the production of ecological wine and cava, always begin in the vineyard. The owners of the winery attribute much of the success of their wines to this. They have five estates ranging from the Garraf region to the pre-coastal mountain range and the Penedès plains.The tour of the vineyards guides guests through plots of land closest to the winery, offering them an opportunity to discover some of the secrets of this traditional crop. After this, guests visit the place where the wine is made. In addition to learning about the different work methods of this dynastic family, guests can also see the huge tanks that the grandfather used, the medium-size tanks of the father, and the small micro-vinification tanks of the sons. Finally, in the wine tasting room visitors can sample some of the firm's products.
