Pa de pagès català country bread

Pa de Pagès Català is a country bread made in Catalonia which received protected geographical indication in 2013.It is a traditional, round loaf with a crispy crust, a soft crumb structure and large air bubbles, and at least the shaping of the loaf is done by hand. The whole process follows a traditional method involving slow fermentation and baking is always done in a refractory bread oven. It is sold in loaves of 250 grams, 500 grams or 2 kilos.The Catalan Federation of Associated Bakers Guilds sparked the creation of Protected Geographical Indication status for “pa de pagès català” in October 2010.
