Collsacabra bean

A newly cultivated crop, the Collsacabra bean took over from the native Serra bean fifty years ago. However, it is in regression due to very reduced yields. With its diminutive size, quick cooking time and fine skin, this bean is highly valued by producers of fine food. It is planted in May and June and harvested between September and October. As with other legumes, it contains carbohydrates and protein, and it is ideal to cook with meat, fish or vegetables.
