Caldes fresh curd cheese

The mató from Caldes is a traditional fresh curd cheese with medieval origins which was made from goats’ and ewes’ milk. It is a light, fluffy dairy product which has a soft and slightly gelatinous texture. Nowadays it also sweeter because the milk that is mostly used is cows’ milk. Emphasis must be given to the fact that the producers have maintained the traditional recipe based on a process which is fully artisanal.
