Ullastrell fresh curd cheese

The mató from Ullastrell is a fresh curd cheese made using traditional methods from goats' milk. It is a dairy product which has gained much recognition due to its high quality. It is an ideal ingredient in desserts, in salads and served with honey, as per the tradition.To produce this curd cheese the milk has first to be boiled and then left to rest until it curdle; a delicate process which requires patience. Please note that there are different varieties: recocido, cendrat and the tendral cheese.
