Cellers Carol Vallès

The Carols have a long family tradition in viticulture and and the production of wine and cava for private consumption. In 1996, they decided to share this tradition with others and began selling their superb cava. Today, they produce a limited amount of 50,000 bottles, which Joan Carol disgorges manually. The visit to Cellers Carol Vallès begins in the ten hectares of their own vineyards. Walking through this isolated and peaceful area in the town of Subirats, removed from the main roads, one is better able to appreciate the nuances of the stocks. Here one can discover the differences between the grape varieties they cultivate: Xarello, Macabeo and Chardonnay. To produce their products, the winery also buys grapes from other vine growers. The tour continues in the farmhouse's small, jam-packedcellar, where an explanation of the entire cava production process is provided and the tools needed to do so are shown. Like the process, the visit ends at the disgorging line, where the sediments are removed from the bottles and the bottles are then corked and labelled. Before leaving, guests have a chance to sample the firm's products.
