Parató

This winery belonging to the Elías family, an old dynasty of vine growers, has 100 hectares of land planted for the most part with vines. The family arrived in Pla del Penedès in 1975, bought Can Respall de Renardes Estate and built a winery. The aim was to restore the winemaking tradition of the family, which was from the Barcelona neighbourhood of Sants, where they made wine with the grapes they cultivated on Montjuïc mountain prior to the the Spanish Civil War. The Penedès winery preserves some of the architectural details of the old cellar in Sans, such as the door from number 59 Sagunt Street and the street sign itself. Furthermore, the old cellar in the Can Respall farmhouse was turned into an agreeable tasting area.Parató is part of the Vinya-Celler-Masia consortium, which groups together different wineries that carry out the entire production process on the estate. Currently, Parató produces around 150,000 bottles a year of wine and cava.They cultivate on their land the white varieties Macabeo, Xarel·lo, Parellada and Chardonnay and the reds Cabernet Sauvignon, Pinot Noir, Tempranillo and Cariñena. The visit includes a commented tour of the winery, consisting of various buildings, an explanation of the family's history and a visit to the underground cellars. On a map one can see the four vineyards the winery currently owns between Pla del Penedès, Font-rubí and Torrelavit.
