El Salon Diana, the historic dining room at the Ritz Hotel, now Palace Hotel, has been remodelled to become the Restaurant Caelis, in a revolution that began with the addition of Romain Fornell. An elaborate cuisine, combining Catalan tradition, French haute cuisine and new trends. The result was awarded with a Michelin star. Starters include turbot with clams on a bed of pig trotter carpaccio and squid with gravy. And for dessert, the peach in rosemary soup with crispy bacon and a duet of apple sorbet is one of the stars. There is a tasting menu and an executive menu at midday. The wine cellar has over 450 different wines.
