Xató

Prepared based on curly endive, anchovies, cod and tuna, and dressed with a tomato, garlic and a spicy red pepper sauce, this unique salad originating from the districts of El Garraf and El Penedès is typical during the winter months. Vilafranca del Penedès fires the starting shot for the xatonades with the festival dedicated to this dish on January 18.
