White aubergine

White aubergines are particular to the fields of el Bages and, until recently, have only been grown in small market gardens. Now, however, local growers have revived this high-quality product. Ideal for roasting, sautéing or in the traditional baked vegetable dish escalivada, the white aubergine has a milder flavour than the black variety and makes a great addition to the Mediterranean diet.
