Caves Llopart

Visits to Cavas Llopart begin in the reception area of the modern facility in the town of Subirats. In this area sundry family objects and documents reveal the full extent of its tradition in the world of viticulture and cava.The second stage of the tour is the tower, which overlooks the entire property, called La Heredad Can Llopart de Subirats. Here guests are able to get an idea of the three wine estates which make up the property, with a total of 70 hectares of vineyards and excellent views of Montserrat and neighbouring Subirats Castle.On the three vineyard plots they grow the white varieties Macabeo, Parellada and Chardonnay and the reds Garnacha, Pinot Noir, Monastrell, Merlot, Cabernet Sauvignon and Tempranillo.The tour also visits the winery's modern subterranean cellar built behind the facility with a vineyard planted above it. The bottles rest in traditional traditional horizontal stacks ('rimas') and are clarified in classic pupitres (racks). To finish up, guests can visit the bottling line before returning to the reception area, where they can b>sample the firm's products. In all, Cavas Llopart markets eight different cavas and three wines (two whites and one red).The Llopart family possess historical documents verifying that Bernardus Leopardi, an ancestor, was granted certain vineyards located on the current Can Llopart de Subirats estatein the 14th century. Starting then, the estate began to cultivate vines, wheat and olive trees until, at the end of the 18th century, it devoted itself exclusively to viticulture.The family motto over the generations is 'ex vite vita', that is, 'life emerges from the vine', consistent with a family philosophy of devotion to vine growing maintained to this day.The Llopart family began producing cava in 1887, at very difficult time, as the phylloxera plague was beginning to ravage the region. In the 1950s, the Lloparts made a strong push towards quality cavas, moving their operation from the old 14th century farmhouse, with a Gothic cellar, to Sant Sadurní. They stayed there until around ten years ago, when they moved to new installations, again on the lands forming part of the inherited Can Llopart de Subirats Estate.
