Somalla

Somalla is a dry cured sausage which is similar to a fuet or a longaniza. It is made from lean pork, salt and ground pepper and produced in narrow casings. Production is concentrated in the districts of el Lluçanes and Osona, although it is produced all over the country. The term somalla comes from its appearance: that of something dry or half dry. It is long and tends to bend in half. It is a high-energy product; however, because of the high levels of fat and salt it contains, consumption in moderation is recommended.
